Sauveterre-de-Rouergue

This is one of the most beautiful villages in France. Around 30km from Rodez, it has a lively and ambitious past. It was created by Guillaume de Mâcon in 1281. To attract interest in the village, financial incentives were introduced very effectively, which annoyed the residents of neighbouring Naucelle. Sauveterre and Naucelle became rivals, and the former came out on top – people flocked to the town, artisans and shop-keepers, building beautiful houses. Meticulous plans for the layout of the village had been made. The central square is especially beautiful, with magnificent houses. Look carefully at the old gates to the village, and also at the ramparts.
Like Laguiole, Sauveterre has a long tradition of knife manufacture, which is somewhat less well known.
